Santa Claus is coming to town. There’s still time to have these ready for him.

Eggnog Cookies

  • 1 1/4 cup sugar
  • 1/2 cup butter
  • 1 egg yolk
  • 1/2 cup eggnog
  • 2 tsp spiced rum
  • 1/4 tsp nutmeg
  • 1/4 tsp cinnamon
  • 1/2 tsp. baking soda
  • 1/8 tsp. salt
  • 3 cups flour
  • cinnamon sugar for dusting

Cream sugar and butter in a stand mixer. Beat in yolk, eggnog and rum. Add baking soda and spices and beat to incorporate. Sift salt and flour; mix with batter. Roll out on floured surface and cut into rounds or desired shapes. Or roll into two separate tubes, about 10-12 inches long. Refrigerate for about half an hour then slice into quarter-inch rounds. Bake on greased sheets in preheated 350 degree oven for about 15 to 20 minutes.
